Designed with warm earth tones, modern touches, and a cozy heritage-inspired feel, the new space aims to give guests a dining experience that feels both welcoming and memorable. After launching its SM Mall of Asia branch earlier this year, Chef JP Anglo’s well-loved restaurant now brings its signature Negrense-inspired dishes closer to Makati’s busy business district, making it an accessible dining spot for nearby workers, residents, and visitors.
Flavors Rooted in Tradition and Creativity
At the center of Sarsa’s success is its food. For more than ten years, Chef JP Anglo has gained a strong following by giving classic Filipino dishes a fresh and modern take. The restaurant’s name Sarsa, which means “sauce”, reflects the Filipino love for rich and flavorful meals. Among its most popular dishes is the Sizzling Kansi, a comforting beef shank and bone marrow stew made with batwan and served sizzling hot with a flavorful tangy gravy. Seafood lovers can try the Seafood Palabok Negra, a unique version of palabok made with squid ink sauce and topped with squid, egg floss, and crispy crablets. Meanwhile, the 3-Way Pork Sisig combines different pork textures with a creamy pork brain sauce for a rich and indulgent dish.
A Michelin‑Recognized Gem in Legazpi Village
Sarsa’s commitment to quality recently earned international recognition after receiving a Bib Gourmand distinction in the first-ever MICHELIN Guide Philippines. The award honors restaurants that serve exceptional food at reasonable prices. Chef JP Anglo shared his gratitude online after the announcement, recalling a promise he made to his wife during their honeymoon in Spain back in 2019, that one day, being recognized by Michelin would be a dream come true. He described the recognition as a meaningful victory not only for the restaurant but also for Filipino cuisine as a whole.
